Berry Picking

There is nothing I look forward to more than berry picking each summer. The season kicks off with strawberries, and just as they tapper off we are treated to raspberries, and when you think things can't get any better blueberries hit the scene.



Maybe it's the fact that I like being able to trace my food back to it's parent plant or maybe it's knowing that my food has not traveled too far to get to my grocery store, whatever the case, I love picking my berries locally. I never buy strawberries in January (they taste too tart anyway) and so the annual arrival of the summer berries are something I look forward to every year. Only have them available for a short time makes them more special and the sweet 'right out of the field' taste far outweighs anything that can be bought in the store.

Blueberry Muffins

1/2 cup of Butter or Margerine
1 1/4 cup of white sugar
2 eggs
2 cups of flour
2 tsp baking soda
1/2 tsp salt
1/4 cup of milk
2 1/2 cups of blueberries (fresh or frozen)
a little more sugar to sprinkle on top



In a bowl cream butter and sugar. Add eggs one at a time.

Mix flour, baking soda and salt together, then add to batter and stir. Add Milk. Add i/2 of berries (crushed) and stir. Then add rest of berries and fold.

Fill greased muffin tins and sprinkle with sugar. Bake at 375 for 20 minutes. Makes about 12 to 18 muffins. Wait 20 minutes before removing from pans.
