Rice - make 6 to 8 servings of rice according to the package instructions. I like to use brown rice so I don't mix it in until it is all cooked. But I will give you the original recipe which calls for 5-minute rice. I also keep a box of this on hand for those days when time is stretched.

Two Chicken Breasts
1 1/4 cups of chicken broth or boullion broth.
1 tbsp of dijon mustard
1 1/4 cups of zesty Italian dressing
one green pepper and one red pepper sliced
2 cups of minute rice
Chop two chicken breasts into cubes and sautee in a skillet. Add broth, mustard, dressing, and peppers and rice. Simmer until rice is cooked, may need to add more water.
If using brown rice, use less water in broth and add rice after you have cooked the peppers and chicken together for a while to soften peppers.
