Bran Muffins



Can you believe I use to make bran muffins (well any muffin for that matter) from a commercial mix? Well it's true. I would buy these over priced things that only required water to make but all the other steps were the same. Made from scratch muffins are one of the quickest, easiest and satisfying of all baked goods in my opinion and why I ever thought the task was difficult is beyond me. Here's one of my favourite recipes. Enjoy!

Bran Muffins

1 1/2 cups of wheat bran
1 cup of milk

Mix in small bowl and set aside.

1/3 cup of vegetable oil
1 egg
2/3 cups of brown sugar
1/2 tsp of vanilla extract

Mix together in a large bowl and then add bran and milk mixture.

Add:

1 cup of flour
1 tsp of baking soda
1 tsp of baking powder
1/2 tsp of salt
raisins (optional)

Mix and then pour into greased or papered muffin pans. Bake at 350F for 15 to 20 minutes.

I find it amazing I used to buy premade pie crusts--it's just flour butter and water!! How easy could it be? Your blog is making me rethink my dependency on "easy" stuff!

I am constantly amazed as well at how much I bought because I "thought" the inflated price was worth the time it saved me. Now that I am better versed in the kitchen, and home, things take only a fraction of the time it took me when I first started and the savings allow me to stay at home.

I know this is an old post, but it got me thinking about how long it has been since I have eaten a real bran muffin.. have just jotted this down, I feel a warm bran muffin and Red Chai tea is on the agenda tomorrow morning..
