English Muffins



I tried these and they turned out perfect. In a little over an hour I had 36 English Muffins, and it cost less than a dollar.

Here's how....

5 tsp of active dry yeast
2 cups of warm water

Dissolve yeast in warm water and let stand.

In a large bowl:

3 cups of flour (you will need 6 cups of flour total)
1 tbsp sugar
3 tsp salt
1/2 cup of shortening

Stir by hand until smooth. Gradually add rest of flour, mixing contiinualy until dough pulls from the bowl edge and become stiff.



On a floured surface roll our dough until it is 1/4 inch thick and cut with a 4inch wide circle. I used a mug to form a good size for my kids.

Sprinkle cornmeal on a cookie sheet. Place cut dough on cookie sheet and sprinkle tops with cornmeal. Cover with a tea towel and let rise in oven with the light on for an hour.



Heat griddle or frying pan to medium heat. You may need to add a bit of fat to keep the dough from sticking but I have a non-stick pan and a cast iron pan and both had no problems, although the cast iron was hotter and browned the muffins faster.



It will take 5 to 6 mins per side to bake and they should rise more as they are being heated. Should be a golden brown.
